Payments
One account. Every way a guest pays.
Card processing through Merchant Tree, built on the NMI gateway. Counter and online, one merchant account.
- Rate quoted in writing1
- No card data on our servers
- Deposits reconciled to the check
At the counter
Dip, tap and swipe, driven from the register. No SDK, nothing extra on your counter to fail mid-service.
Online
The same account takes payment on your ordering site. One set of deposits, not two you reconcile by hand.
Card on file
Saved cards sit in the gateway vault. House accounts and catering deposits work without you holding a number.

- Posted to QuickBooks and read back to confirm it matched
Your rate
Quoted in writing. Margin shown.
We quote your restaurant rather than advertise an average. A coffee shop on tapped debit and a steakhouse on rewards cards do not pay the same interchange.
The usual way
A headline rate
Padded to cover the expensive case, or honest until your first full statement.

Payments FAQ
Who actually processes my payments?
Merchant Tree, our gateway partner, on the NMI platform. NMI is established payments infrastructure processing for a very large number of merchants, which matters because your money should not depend on a young company having written its own processor. Merchant Tree underwrites and provisions your merchant account as part of onboarding, the same way any processor does.
Do you ever hold my customers’ card numbers?
No. The gateway tokenizes the card in the customer’s browser before anything reaches us, so our servers only ever hold a token. Not a card number, not a CVV, at any point. Saved cards live in the gateway’s vault rather than in our database, and card-present readers are certified against the gateway and talk to it directly. Practically, the sensitive data never lands somewhere it could be stolen from us, and your own PCI paperwork stays in the lightest category a merchant can be in.
Why don’t you publish one processing rate?
Because any single advertised rate is dishonest for half the restaurants who read it. Interchange varies genuinely by card mix and volume, so a flat headline number is either padded enough to cover the expensive case, with everyone else subsidising it, or it is honest at first and quietly reset once you are settled in. We would rather price your restaurant. You get the rate in writing before you sign, with our margin visible inside it, and it does not change without notice.
Can I keep my current processor?
Talk to us. The payment layer in Mamal is provider-agnostic by design and we have kept it that way deliberately, so this is a conversation rather than a flat no. What we will tell you honestly is where you lose something by splitting your processing away from your POS, which is mostly in reconciliation and in how quickly a disputed charge can be traced back to a specific check.
How fast do I get my money?
Standard settlement timing from the processor, confirmed to you during onboarding rather than promised on a marketing page, because it depends on your merchant account and your bank. What Mamal adds is that every settlement is reconciled against the checks it covers, so when a deposit is smaller than you expected you can see which batch, which fees and which adjustments account for the difference instead of guessing.
Want your rate?
Send your volume and we’ll quote it.
- Your processing rate is quoted in writing by Merchant Tree before you sign, based on your card mix and volume. Merchant account approval and provisioning are handled during onboarding and are subject to underwriting.
